This slicing knife from our Prochef Collection has an 11-3/4″ serrated (wavy type) blade and a comfortable and durable POM handle, triple riveted.
This slicing knife is the tool of choice for slicing roast beef, turkey, and other roasted meats, as well as charcuterie. Good for home kitchens, restaurants and food processing facilities.
Handle available in two colors: black and yellow.
Molybdenum Vanadium stainless steel blade has been tempered at 1900 °F using precision Swiss equipment, for better sharpness and rust resistance. Hardness is 54-56 RC. Blade is 11-3/4" long and 1/8" thick. Hardness is 55-57 RC. Handle is made of Polyoxymethylene (POM), a strong synthetic polymer with excellent dimensional stability.
Knife is dishwasher safe, however, for lasting sharpness, drying with a soft cloth immediately after machine or hand-washing is recommended.
